Gluten Free Dinner Tonight

I generally don't do the recipe thing, however, as my wonderful partner is a real and true victim of Celiac disease I figured maybe my constant cooking can help a few others out there who have a bad day at the grocery store looking for G-F meal ideas. You know who you are. I've been doing this for 4 years and I still occasionally find myself in tears in the pasta aisle at the local grocery store. Yes, it's embarrassing, but I love him so I persevere.

So here goes -- my first fast and easy Gluten Free dinner option, which happens to be one, if not the, favorite that comes out of the kitchen.

Pan Fried Tilapia seasoned with Garlic, Rosemary, Salt and Pepper.

So here goes...

Ingredients:

4 fresh Tilapia Fillets (often at sale in the larger upermarkets)
1 Clove Garlic -- sliced thin
3 tablespoons Oilve Oil
Salt
Pepper (I like fresh ground mixed peppercorns)
Dried Rosemary
Celery Salt
4 oz jar of Roasted Red peppers, sliced thin
4 oz jar of small Non Paril Capers
Juice of one Lemon
Freshly grated Parmesean Cheese

Heat the Olive oil in a large skillet over medium heat (nonstick, cast iron, whatever)
While oil heats, rinse Fillets and do a quick drip dry
Season Fillets with salt, pepper and a spinkle of Rosemary and Celery Salt on both sides
Gently press seasonings into fish with fingers on both sides
Drop garlic slices into heated oil
Quickly add fish fillets

Allow fish to pan fry for approximately 8 minutes. Fish should be 3/4 of the way cooked through
Carefully flip Fish Fillets so as not to break or flake them and lower heat to Medium Low
Add Capers, Lemon Juice, Roasted Red Peppers, and then a sprinkle of Parmesean Cheese to the to frying pan after flipping fish
Allow fish to fry for 4 more minutes on other side
Remove from heat

Serve fillets with Saffron Rice or Baked Potato and a freshly mixed Ceasar Salad.
